6 Tbsp Olive Oil
10 Oz Fideos
1/2 Large Onion, Chopped
2 Garlic Coves, Minced
½ C Spanish Chorizo, Diced
1 Bay Leaf
1 C White Wine
5 C Fish Stock
3 Pounds Mussels, Cleaned
2 Tbsp. Parsley, Chopped Fine


1.      Heat ¼ c Olive Oil in a heavy pot over med-low heat until hot. Add Fideos and cook while stirring frequently until golden brown, about 10-15 minutes, then remove with slotted spoon.

2.      Cook Chorizo, Bay Leaf, Onion & Garlic in Olive Oil over med heat while stirring until Onion is softened, about 4-5 minutes. Add Wine and bring to a boil for 5 minutes. Add Stock and Salt and return to boil, then add Mussels. Cover and cook for 3-6 minutes until Mussels open completely. Transfer Mussels to bowl with slotted spoon. Discard any Mussels that do not open.

3.      Add broth from Mussels to Sofrito or Tomate Frito and cook over med heat then add Fideos and cook while stirring frequenty until pasta is cooked, about 12-15 minutes. Add Mussels and Parsley and cook, while tossing until Mussels are heated through.
