2 Lbs Mahi-Mahi Filet
2/3 C Olive Oil
½ C Tequila
Juice Of 1 Lime (Reserve Zest)
1/3 C Cilantro, Chopped
½ Red Onion, Diced
3 Garlic Cloves, Diced
1 Jalapeno Pepper, Seeded & Diced
½ Tsp Cayenne Pepper
¾ Tsp Ground Cumin


1.      Combine all ingredients in bowl, except Oil.

2.      Slowly whisk in Olive oil until well combined.

3.      Place fish in large baking dish or plastic bad.

4.      Pour marinade over  fish until well covered on all sides.

5.      Marinate for at least 30-45 minutes.

Reserve marinade for basting. Mahi can be grilled, baked or sautéed.
