(6) Half Pound Snapper Fillets
Juice Of 3 Limes
Large Can Diced Tomatoes
2 Tbsp Oil
2 Medium Onions, Chopped
2 Jalapeno Peppers, Seeded And Finely Diced
3 Cloves Garlic, Finely Minced
2 Tbsp Capers
10 Green Olives (With Pimento)
1/8 Tsp Cinnamon
1/8 Tsp Ground Cloves


1.      Marinate Snapper In Lime Juice For One Hour, Turning Once.

2.      Strain Juice Of Tomatoes And Set Aside.

3.      Heat Oil, Cook Onions Over Medium Heat Until Translucent.

4.      Add Jalapenos & Garlic And Cook For One Additional Minute.

5.      Add Tomatoes, Lime Juice From Snapper Filet, Tomato Juice.

6.      Cook For About 5minutes.

7.      Add Capers, Olives, Cinnamon & Cloves.

8.      Season With Salt & Pepper And Cook For Another 5-8 Minutes.

9.      Spoon About Half Of The Sauce Into Glass Baking Dish.

10.  Place Snapper Filets In Dish And Spoon Sauce Over The Top.

11.  Bake For About 15-18 Minutes Or Until Fish Is Opaque.

12.  Using A Spatula Place Fish On Plates And Spoon Sauce Over.

Serve With Boiled Potatoes Or Rice
