12 Roma Tomatoes, Peeled & Chopped
2 Jalapeno Peppers, Roasted & Peeled (And Seeded For Less Heat)
2 Cans Tomato Sauce
1 Large Onion, Chopped
5 Cloves Garlic, Crushed
2 Cans Beans (Black, Pinto)
2 Tbsp White Vinegar
Sea Salt & Pepper
Chili Powder
Ground Cumin

1 Can Beer
I Can Green Chiles
1 Red Bell Pepper, Diced
1 Tbsp Cocoa
1 Lb Fresh Chicken, Cut In Pieces
1 Large Spicy Chorizo, Diced
1 Lb Chuck Roast, Cut In Pieces
Chicken Stock
Fresh Thyme
Cardamom Seeds
1 Bay Leaf
1 Cinnamon Stick-Combine These 4 Items And Wrap In Cheese Cloth And Tied With Butcher Twine


1.      Season Meat And Sear In A Hot Pan With Olive Oil Until Well Browned On All Sides. Remove And Sauté Chorizo In Pan Until Browned. Remove.

2.       Add A Bit More Olive Oil And Sweat Onions, Then Add Garlic And Continue.

3.      Add Bell Pepper And Cook Until Soft. Deglaze Pan With Half The Beer And Stir To Combine Flavors.

4.      Add Cumin, Chili Powder, Oregano, And Cook Over Low Heat For About 2-3 Minutes.

5.      Add Tomatoes And Continue Cooking For Another 3 Minutes Until Well Combined. Add Jalapenos, Tomato Sauce And Beans.

6.      Adjust Thickness Of Sauce With Chicken Broth, Texture Should Be A Bit Thin As It Will Reduce As It Cooks.

7.      Add Meat To Pot And Bring To A Simmer. Stir In Cocoa.

8.      Season With Salt & Pepper And Add Sachet With Seasonings.

9.      Simmer For At Least One Hour On Low And Stir Occasionally.

Check Consistency And Adjust With Stock.
