4-8 Oz Halibut Filets                                                   
2 Garlic Cloves, Diced Fine
½ Cup White Wine
Sea Salt & Pepper                                                     
 Juice Of 1 Lemon
Olive Oil                                                                    
Capers Or Green Olives, Sliced
1½ Cup Leeks, Julienne Cut (White Only)                        
Chopped Parsley


Preheat Oven To 375˚F

1.       Dredge Halibut In Flour And Season Both Sides With Sea Salt And Pepper

2.      Heat Olive Oil In Pan On Medium-High Heat. Sear Halibut On Both Sides For 2-3 Minutes Or Until Golden Brown On Both Sides. Transfer Halibut To Plate.

3.      Reduce Heat And Sauté Leeks For 5-6 Minutes Or Until Completely Soft. Add Garlic And Sauté For An Additional 2 Minutes.

4.      Deglaze Pan With White Wine And Add Lemon Juice. Add Capers/Olives. Cook For 2 Minutes On Low. Put Halibut Back In Ovenproof Pan And Heat.

5.      Put Pan In Preheated Oven For 4-5 Minutes Or Until Halibut Is Flaky And Opaque.

Serve Halibut With Juices From Pan Drizzled Over And Sprinkled With Chopped Parsey.
