SERVES 2 - 3


3 Tbsp Olive Oil                                  
1 Onion, Chopped Fine
2 Garlic Cloves, Diced            
Olives, Pitted And Sliced
1 Large Can Stewed Tomato
2 Tsp Oregano, Dry
2 Tsp Basil, Dry
Parsley, Chopped
2/3 Cup White Wine
1 ½ Lb Cod Fillet


1.      Sauté Onion And Garlic In Olive Oil Until Soft But Not Browned. Add Oregano And Basil And Cook For Another Minute. Deglaze With White Wine And Cook Over Med Heat For About 2 Minutes. Add Tomatoes And Olives. Bring To A Simmer And Cook For About 5 Minutes Over Low Heat.

2.      Season Cod Fillet In Salt & Pepper. Add To Pan And Increase Heat To Med. Spoon Sauce Over Cod Then Cover And Cook For 2-3 Minutes. Baste With Sauce Frequently. Once Cod Is Cooked Remove Carefully From Pan And Put On Warm Plates.

3.      Cook Sauce Until Reduced To Desired Thickness. Spoon Sauce, Tomato And Onions Over Cod And Drizzle Sauce Over Cod. Sprinkle With Parsley And Serve Immediately.
