2 Lbs Grouper Filet, Cut In 4 Pieces                           
4 Oz Chorizo Or Linguica                               
1 Green Bell Pepper, Diced                                        
1 Cup White Wine
1 Small Onion, Diced                                                   
1 Tbsp Tomato Paste
1 Stalk Celery, Diced Fine                                            
Olive Oil
3 Cloves Garlic, Diced Fine                                          
1 1/3 Cup Fish Stock
1 Sprig Fresh Thyme Leaves                                        
Salt & Pepper


Preheat Oven To 400˚

1.       Season Grouper With Salt & Pepper. Add About 2 Tbsp Olive Oil To Pan And Heat On Med-High. When Hot, Sear Grouper In Pan For About 2 Minutes Until Browned. Carefully Turn And Sear On Other Side, Then Remove From Pan.

2.       Add Another Tablespoon Olive Oil To Pan And Heat To Medium. Add Onion And Celery And Sauté Until Tender, About 5 Minutes. Add Green Pepper And Continue To Sauté Until Peppers Are Tender, Another 3-4 Minutes. Add Garlic To Pan And Sauté For About 1 Minute. Remove Vegetables From Pan. 

3.      Add Chorizo And Sauté Until Well Browned. If Needed, Add A Bit More Olive Oil. Once The Chorizo Is Browned Add Vegetables Back To Pan And Stir Together. Deglaze The Pan With The White Wine And Cook Until Reduced By Half, About 4 Minutes.  Add Thyme Leaves And Stir Into Sauce.

4.      Add Fish Stock To Pan And Bring To A Boil. Stir In Tomato Paste. Add Grouper To Pan And Baste With Sauce. Cover And Bake In Oven For About 10 Minutes Or Until Fish Is Opaque.

5.      Serve Immediately With Chorizo And Sauce Spooned Over Fish.
