SERVES 3 - 4


1 ½ Lbs Bay Scallops
½ C All purpose Flour
4 T Olive Oil
2 Garlic cloves, minced
Lemon Wedges
Sprig Parsley, chopped fine
1/3 c White Wine
Salt & Pepper to taste


1.      Wash scallops and pat dry, season with Salt & Pepper on both sides.  

2.      Add Flour to shallow bowl and roll Scallops in Flour. 

3.      Heat Olive Oil in Skillet over Med heat. 

4.      Add Scallops and cook for 2-3 minutes. 

5.      Add Garlic and cook briefly then add Wine. 

6.      Cook for another 3-4 minutes, then stir in Parsley.
7.      Remove from heat and serve with Lemon wedges.

Best served over Pasta or Rice.
